A Taste of Africa from Jamala Madikwe

While at home over the last six months, we’ve been reminiscing on trips past. One of the highlights of any great safari is fabulous food in spectacular locations. We’ve been inspired to recreate some of the recipes we have enjoyed on our travels from the comfort of home. Managing Director Laura chose three of her favourites from a safari in South Africa as the first of the recipes we’d like to share with you in our newest blog series: Taste of Africa.
'These three recipes are from the book Savannah to Sea. Author Nico Verster is the Head Chef at Jamala Madikwe. I was there in 2010, but still remember the delicious food he prepared, which we enjoyed against a backdrop of a herd of around 40 elephants at the waterhole.'

— Laura Burdett-Munns, Managing Director

Nico has also authored a second safari-inspired cookbook, Safaris and Spices. We hope these recipes rekindle fond memories of safaris past and that you enjoy trying them out!
Jamala Madikwe Royal Safari Lodge is one of the most exclusive lodges in the reserve, owned by Rodney Steyn who after years of managing five-star safari lodges decided it was time to create his dream property. With his experienced team Rodney ensures that every guest at Jamala is treated to excellent service, cuisine, and accommodation, not to mention an unforgettable game viewing experience.
